Biryani, tikka, samosa, pakora tops the list. You could bribe a desi with a samosa (but don't try to bribe with one that's gone cold and soggy, he will murder you).

POTATO SAMOSA RECIPE
INGREDIENTS
Ready made Samosa patti , you can easily find in frozen section of grocery store
Boiled potatoes half kg
Onion finely chopped 1 cup
Cilantro finely chopped 1 cup
Salt to taste
Red chilli flakes 1 tsp
Lemon juice 1 tbsp
Red chilli sauce 1 tbsp
Cummin coarsely grind 1 tsp
Garam masala (optional) 1 tbsp
Flour 3 tbsp
Oil for frying

DIRECTIONS
1. Mash potatoes. Add cilantro, onion, spices, lemon juice, sauce. Mix well
2. Add water to flour to make a thick paste, like pancake consistency. Use it to seal samosa patti corners. Fold samosa patti and fill with the filling. For beginners, this samosa patti filling tutorial is very helpful.

3. Heat oil to medium. Fry samosa on low flame till golden. Serve with chilli ketchup or green chutney. And a cup of hot chai.

TIP OF THE POST
For long-lasting crispy samosa, air dry the samosa for an hour before frying, because freezing makes them moist.
Heat oil then fry on low flame. Take all your time. Slow frying is the secret of golden crispness of samosa.

Put cooked samosa on a cooling rack, in an airy spot, so the steam gets out quickly. Turn them often, so both side cools down fast. If you skip this step the downside of samosa will lose its crispness.
