These golden, crunchy, spicy pakoras served with chutney or ketchup is a must in hi-tea in southeast asia, let it be an occasional evening guest or everyday iftari.

There are many popular recipes of pakora, but the most beloved, adult kiddos friendly, is the famous ALLU PAKORA as called by the dessi Peoples.

It's quick to make, preparation time is about 10 minutes. The rest is deep-frying in batches. They are ready by the time you have a steaming hot cup of tea ready.

ALLU PAKORA RECIPE

Enough for 4 Peoples. If there are other appetizers to accompany, can serve 10 to 12 peoples.

INGREDIENTS

besan ( chickpeas flour or gram flour) 1 cup

Crushed red chilli 1 tbsp

Zeera( cumin) crushed or whole 1 tbsp

Baking soda 1/2 tsp

Water 1/2 cup or enough to make a batter of a pancake consistency.

Potatoes 5 small. Peeled and sliced lengthwise about 2mm thick. Dont slice them thicker or they will not cook throughly.

cooking oil up to 3 – 4 inches deep in pot for deep-frying.

DIRECTIONS

Mix every thing except potatoes and oil. Whisk till there are no clumps and the batter is of pancake consistency. Mean while heat oil to medium hot about 350°. Slice potatoes. Dip few potatoes in batter, don't leave them in batter as they tend to make it watery.  Make sure the batter coats both sides. Dip in hot oil. Cook toll golden brown.

Serve them warm with green tamarind chutney or ketchup. Enjoy!
